Be able to change the avatars at the quiz, and just have nicknames of the participants instead.

I implore Menti to add a setting to be able to lock the quiz nicknames (i.e., so users cannot enter a name of their own choosing). I cannot believe this has still not been done. We no longer share the quiz leaderboard in some classes because there are students who will edit the nicknames to something offensive. In classes of 100-300 students, there will always be a few who try this and the damage is done as soon as the leaderboard is displayed. This is such a shame. The quizzes are great and we use them weekly, but much of the fun is gone without being able to show the leaderboard.
Building on what others have said (esp. Lydia), if the nickname is locked you could always allow the participant to ask for a different avatar/nickname. E.g., someone who doesn't want to be Santa Claus and is not able to edit the nickname could click "Select again" button and get a new, random avatar and nickname. (In fact, I think this is even better since even if you can change the name, the Santa Claus avatar still looks like Santa Claus.)

I just participated in a Mentimeter in a work meeting, and my icon was a Santa Claus that I was not allowed to change. I am not a Christin and do not celebrate Christmas, so I was a bit put off that I was forced to represent myself with this icon.
My suggestion is to be a bit more culturally sensitive to your users with regard to religion, ethnicity, social identity, etc. and allow people to change an icon if they are uncomfortable or even offended by the one they are randomly assigned.

If people don't remember the name of their avatar, they can't follow the leaderboard. They need to set it to the name they can recognize

I don't think this is an issue since users currently see their avatar on their device when the leaderboard is shown. As long as avatars are unique that is all they need to match up if nicknames aren't shown. On their device they also see their device their placement on the leaderboard (although I'm not sure if this is true for players who do not appear on the leaderboard screen).
Personally, my vote is very strongly for a setting to be able to lock the nicknames to the defaults.

I think random avatars are fine... the concern is actually the Name... anyone can change their name to MIKE HUNT or worse... say that out loud and see how that sounds.

Mentimeter is amazing, but the avatars are too childish, Google Type, and most of our clients are business more serious.
It´s a Shame.

Allow User to Choose Avatar - On/Off
Autofill Avatar Name - On/Off

It would be great can select some style of avatar, since when it is used for proffesional purpose some of them could not be very suitable
